          To make Special Veg Biryani, you will need to prepare Instructions. Here's a step-by-step recipe to guide you:


Vegetables :-

• Paneer

• Beans

• Carrot

• Cauliflower

• Potato

• Onion

• Tomato


Ingredients:

- 1 KG Delhi rice

- 1 cup mixed vegetables (carrots, peas, beans, cauliflower, etc.), chopped

- 1 large onion, thinly sliced

- 2 tomatoes, finely chopped

- 1/2 cup plain yogurt

- 1/4 cup chopped mint leaves

- 1/4 cup chopped cilantro leaves

- 2 tablespoons biryani masala powder

- 1 tablespoon ginger-garlic paste

- 1 cinnamon stick

- 4 green cardamom pods

- 4 cloves

- 1 bay leaf

- 2 tablespoons ghee or vegetable oil

- Salt to taste

- Fried onions (optional, for garnish)

- Cashews and raisins (optional, for garnish)


Instructions:

1. Wash the basmati rice thoroughly and soak it in water for 30 minutes. Drain the rice and set it aside.

2. Heat ghee or vegetable oil in a large pot over medium heat. Add the cinnamon stick, cardamom pods, cloves, and bay leaf. Sauté for a minute until fragrant.

3. Add the sliced onions and cook until they turn golden brown. Remove half of the onions from the pot and set them aside for garnishing later.

4. Add the ginger-garlic paste to the pot and sauté for a minute until the raw smell disappears.

5. Add the chopped tomatoes and cook until they become soft and mushy.

6. Now, add the mixed vegetables to the pot and sauté for a couple of minutes.

7. Add the biryani masala powder and salt to taste. Mix well to coat the vegetables with the spices.

8. Beat the yogurt in a bowl and add it to the pot. Stir well to combine everything.

9. Add the soaked and drained rice to the pot. Gently mix the rice with the vegetable mixture, ensuring that the rice is evenly distributed.

10. Add enough water to the pot to cook the rice. The ratio of rice to water should be 1:2. Cover the pot with a tight-fitting lid and let the rice cook on low heat for about 20-25 minutes, or until the rice is fully cooked and fluffy.

11. Once the rice is cooked, turn off the heat and let it sit, covered, for another 5-10 minutes.

12. Fluff the rice gently with a fork, taking care not to break the grains.

13. Garnish the vegetable biryani with the reserved fried onions, cashews, and raisins, if desired. Also, sprinkle chopped mint leaves and cilantro on top.

14. Serve the vegetable biryani hot with raita (yogurt dip) or any side dish of your choice.
