How to make Special Veg Tiranga Biryani
Ingredients:
- 1 KG Delhi rice
- 1 cup chopped mixed vegetables (carrots, beans, peas, etc.)
- 1/2 cup chopped onion
- 1/2 cup chopped tomatoes
- 1 tablespoon ginger-garlic paste
- 1 teaspoon cumin seeds
- 1 teaspoon red chili powder
- 1/2 teaspoon turmeric powder
- 1/2 teaspoon garam masala
- 1/4 cup chopped fresh coriander leaves
- 1/4 cup chopped fresh mint leaves
- 2 tablespoons ghee (clarified butter) or vegetable oil
- Salt to taste
- Saffron strands soaked in milk (for garnishing)
For the white layer (rice):
1. Wash the Delhi rice under running water until the water runs clear. Soak the rice in water for about 30 minutes.
2. In a large pot, bring water to a boil. Add salt to the boiling water. Drain the soaked rice and add it to the boiling water.
3. Cook the rice until it is 70% done (still slightly undercooked). Drain the rice and set it aside.
For the green layer (vegetables):
1. Heat ghee or oil in a separate pan. Add cumin seeds and let them splutter.
2. Add chopped onions and sauté until they turn translucent.
3. Add ginger-garlic paste and sauté for another minute.
4. Add the mixed vegetables and sauté for a few minutes until they are partially cooked.
5. Add turmeric powder, red chili powder, and salt. Mix well.
6. Add chopped mint leaves and coriander leaves. Mix everything together and cook for a few more minutes until the vegetables are cooked but still firm. Remove from heat and set aside.
For the orange layer (tomato masala):
1. In the same pan, add a little more ghee or oil if needed. Add the chopped tomatoes and cook until they become soft and mushy.
2. Add garam masala and salt. Mix well and cook for a few more minutes. Remove from heat and set aside.
3. Tiranga colour (orange and green)
Layering the Special Veg Tiranga Biryani:
1. Take a deep, oven-safe pot or a heavy-bottomed pan. Grease it with ghee or oil to prevent sticking.
2. Divide the partially cooked rice into three equal portions.
3. Spread one portion of rice as the bottom layer in the pot.
4. Spread the green vegetable layer on top of the rice.
5. Add the second portion of rice as the middle layer.
6. Spread the orange tomato masala layer on top of the rice.
7. Finally, add the remaining portion of rice as the top layer.
8. Garnish with saffron strands soaked in milk for a vibrant color and cover the pot with a tight-fitting lid.
Cooking the Special Veg Tiranga Biryani:
1. Place the pot on the stove over low heat. Cook for about 15-20 minutes until the flavors meld together and the rice is fully cooked.
2. Alternatively, you can also bake the biryani in a preheated oven at 350°F (175°C) for about 20-25 minutes.
3. Once cooked, remove from heat and let it rest for a few minutes.
4. Gently mix the layers before serving, taking care not to break the rice grains.
5. Serve the Special Veg Tiranga Biryani hot with raita or any other side dish of your choice.
